| Italian Sausage & Spinach Soup |

Ingredient |
- 1 (8 oz.) packages of House Tofu Shirataki Fettuccine or House Tofu Shirataki Noodle Shape
- 8 oz. sweet italian turkey sausage, (skin removed) cut in 1/2-inch thick slices.
- 1 cup finely chopped red onions
- 1 tsp. chopped garlic
- 4 cups low sodium chicken broth
- 1 package (10 oz.) frozen chopped spinach
- 1/2 tsp. dried oregano (2 tsp. fresh)
*May substitute: 1 (14 oz.) package House Premium Tofu Firm cut in cubes, and use only half the sausage (4 oz.). |

Makes six servings
- Prepare noodles according to package directions below. Cut in 3 to 4-inch lengths.
- In 4-quart saucepan, brown sliced sausage. Add onions and garlic, cook over medium heat 5 minutes.
- Stir in chicken broth, bring to a simmer. Cook 5 minutes.
- Stir in frozen spinach and oregano, return simmer.
- Add noodles. Cook 5 minutes. Serve.
Pre-Preparation Directions for House Tofu
Shirataki Noodles
Place colander in the sink. Cut package open with
scissors, drain noodles in colander and refresh
1 minute under cold running water. Drain.
Bring 1 quart water to a boil in a 2-3 quart saucepan,
add 1/2 teaspoon salt and noodles.
Simmer 2 minutes. Drain and rinse under cold water.
Set aside until ready to use.
For drier noodles, toss in a lightly oiled, hot,
nonstick pan for 1 minute before serving or combining
with sauses.
