They opened the restaurant in 1994 at the corner of Zelzah Avenue and Ventura Boulevard. At first there were not many customers, but people soon learned that Makoto Sushi is always “oiishi” – delicious! So the number of customers grew. Now they are so busy “it is difficult to keep up,” says owner chef Makoto with a wry smile. Many customers including men and women of all ages enjoy the restaurant until 1 A.M., which is closing time.

The menu includes stylish offerings such as “tuna garlic steak” as well as traditional dishes like “maguro tataki” (chunky tuna). In the old days Makoto made sushi on La Cienega Boulevard; for the twenty years since, he has been satisfying customers as they continued to enjoy his traditional style sushi. To please his old customers, and to remain true to Japanese culinary traditions, he cannot take traditional sushi off the menu. At first glance, owner chef Makoto looks rugged, but inside he is gentle; he loves his customers, and if you speak with him, you’ll find he is a very friendly person.
 
Ceviche (conch - $9.95)
If you love shellfish, you won’t be able to stay away from their ceviche. It is to die for! The taste is crunchy and totally conch, but the conch is as good as abalone! And with salsa on top, it goes perfectly with an alcoholic drink. Usually ceviche is made of chunks of white fish and salsa mixed together, but they slice fresh conch with salsa; which is the owner chef’s brilliant idea. At the center of the dish, there is marinated seaweed with Yuzu dressing.
Yuzu flavor gives an excellent accent, and the seaweed is soft and nicely chilled. As you eat this dish you can almost smell the aroma of the sea.

Hanabi ($5.95)
This is an original Makoto sushi creation. Its inspiration is the crackle of fireworks. When you eat it, you will surely feel that crackle because of the spicy taste. Spicy tuna is quite hot, but it has become a cherished habit. Rice ball with soy sauce is grilled until the soy sauce is slightly burnt, creating a pungent taste that enhances the flavor remarkably.

Usually combined with spicy tuna, the coating is similar to tempura, but where tempura is fried, our rice bowl is grilled creating a lighter texture Many customers are fascinated by the charm of Hanabi; some take out ten orders at a time! And for customers who find spicy food challenging, you’re welcome to tell us how hot you want it; a milder version is always available.
