| Grilled Mediterranean Tofu |

Ingredient |
- 12 ounces. House Foods Premium Extra-Firm Tofu or Organic Extra-Firm Tofu
- 1/4 cup. extra-virgin olive oil
- 1 lemon. Grated rind and juice
- 2 cloves garlic. minced
- 2 tablespoons. minced fresh herbs, such as parsley, mint, thyme, oregano, sage
- 1 tablespoon. Dijon mustard
- 1/2 teaspoon. sea salt
- 1/2 teaspoon. freshly ground pepper

Makes Four Servings
- Drain and rinse tofu; pat dry. Cut the block crosswise into eight 1/2-inch-thick slices and place in a shallow dish.
- Whisk olive oil, lemon rind and juice, garlic, thyme, mustard, salt, and pepper in a small bowl; measure out and reserve 2 tablespoons olive oil mixture for basting tofu. Pour remaining marinade over tofu, turning to coat. Cover and refrigerate at least 30 minutes or overnight, turning occasionally.
- Preheat grill for medium-high heat. Remove tofu from marinade and discard marinade. Place tofu on a lightly oiled grill rack; grill, basting occasionally with reserved olive oil mixture, until lightly browned, about 3 to 4 minutes on each side. Serve immediately.
