The open kitchen stands out immediately upon entering this very modern interior atmosphere. The floor of the open kitchen is deliberately situated one level below, paired with the height with the customers’ line of vision, and creating a moving visual entrance. Amongst soba, this soba is famous as the Tokyo Kanda area style of soba. Slipping through ones teeth, it is really satisfying and filling. A lot of katsuo bonito tuna is used in the broth, and the refreshing taste is really apparent. The signature style is to eat the soba at the end of the meal. All of the staff test out the Japanese home-style dishes before debuting the menu. The restaurant really has also established its place as one that features the seasonality and freshness of the ingredients.


The thickly rolled egg omelet uses free-range local chicken eggs. There is beautiful layering in the middle of the omelet. Each detailed layer is soaked in dashi broth. The aroma spreads just taking a bite into your mouth, and is an enjoyable fluffy sensation to the palate. Another popular dish is kinpira gobo burdock root. The seasoning is refreshing with no overbearing taste. It is a dish that one can’t say enough about how satisfying are the subtle tastes of the thinly and carefully sliced burdock. Although this is a dish that shows up on most Japanese dinner tables, one could say that this is one rank above in taste.
Even in Japan if something is not really fresh it is difficult to use as sashimi. Let’s take pacific saury fish as an example. One can taste the great taste of the season’s blessings when the soy sauce as soaked into the fat, when the meat takes on the flavors. High-quality beautifully sliced toro fatty tuna melts in the mouth right in the moment.
